This is quite a big area actually, as mentioned above without details its hard to know where to start!
The idea of set tasks, i.e. a play session that includes specific things to complete is quite common and widespread, this could include things such as directed masturbation (edging, orgasm denial etc), the use of certain items as dildos, using clothes pegs or other clips on your tits, nipples or even labia and on to self bondage etc.
Self bondage is a whole world on its own with some fairly well designed methods and safety procedures too.
Many if the games can include a chance element by using the roll of dice to change the requirements as you go. If you can give us some idea of what areas  you're interested in I'm sure there will be plenty of suggestions forthcoming.

Well I suppose it depends on if you're domme or sub and of course, your particular fetishes.  If you enjoy bondage I'd recommend taking special care with self bondage - but you could certainly bind your ankles (keeping blood flow in mind of course) while stimulating yourself.  Insertables are quite fun - maybe a ginger butt plug might get your blood racing - but do your research before attempting it.

If you're dominant it's a bit trickier.  Most of what you do for yourself isn't going to do it (my opinion only of course).  As a dominant not being a pain slut or rope bunny means none of that is an option.  So predictably I personally turn to bdsm porn.  But if you are lucky enough to have your submissive near by but don't feel like engaging them, using your sub as a prop or just as a voyeur can be pretty hot.  Not much better while you use your sub as a human vibrator, getting off while you completely ignore them

I'm haven't been able to test the waters with my vanilla gf yet but I think I might be a switch.

Have you considered using a truth or dare website to leave details about how you masterbate in others' hands? Details like how, where, with what etc ? Or self punishment in the same fashion.

Self punishment never seems to work as I dont stick to it in the moment.
