I went out on a limb and made things I never made before. Earlier this month. I attended a concert at Severance Hall in Cleveland, OH. It was all things Irish. Performing was the Cleveland POPs orchestra.
So to keep the Irish going I decided to make Corned Beef, Colcannon, Cabbage, and Glazed Carrots. The only thing I didn't make was Irish Soda Bread much to my regret. But I think that what I did attempt was challenging enough.
It actually turned out pretty good. (Photo below)
My dad's family came from Donegal in the 1700's. I am actually a mixture of Scotch. Irish, Welsh, English and German on my dad's side and Polish and Chech on my mom's with a tiny bit of Jewish thrown in for good measure.
So this year I wanted to celebrate my heritage. In June, Cleveland will host the Scottish games practically in my backyard and I intend to be there for all three days.
